In determining the 2012 outlook for the food industry, Food Processing quoted Packaged Facts’ publisher David Sprinkle, who noted that manufacturers, faced with increased consumer demand, are including more healthy fats and oils. According to Packaged Facts, fats and oils raked in $9.2 billion in sales in 2011 and are projected to approach $10.6 billion by 2016.
